Oatmeal Chocolate Chip Cookies

Servings: 3 dozen

Ingredients
  

  • 2 sticks sticks softened unsalted butter
  • 1 c. brown sugar
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 1/2 c. oats
  • 2 c. flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 c. semi-sweet chocolate chips

Method
 

  1. Preheat oven to 350.
  2. Mix the softened butter, brown sugar, and sugar together.
  3. Mix in one egg at a time. Then add in the vanilla. Set aside.
  4. In another bowl combine flour, oats, baking soda, and salt.
  5. Stir the wet ingredients and the dry ingredients together by hand. Do not use an electric mixer.
  6. Add the chocolate chips.
  7. Roll into about 1-1/2 inch balls and space about 2 inches apart on a parchment lined baking sheet.
  8. Bake in batches at 350 for 10-12 minutes.
  9. Take out just before they start to brown for a soft cookie. Cool on a wire rack.
