Baking in the Fall- Oatmeal Chocolate Chip Cookie Recipe

Fall is finally here. And we all know Fall is for BAKING!

I love baking and I actually used to love it more before I had kids. I know it sounds horrible — hear me out. Baking now is typically met with a lot of arguing about who gets to stir or crack the egg or who gets to lick the spoon and then the absolute disaster of a mess that happens just blows my mind. Not to mention the amount of patience I have to conjure. The exhaustion that ensues. And the amount of time the actual baked good stays in our house is about less than a day.

Alas, I still bake and I still bake with the kids. They love it. I may just need to start baking at night if I need something a bit more calming.

These cookies are absolute perfection. I’m not an oatmeal raisin girly and I won’t judge if you are (secretly judging), so only oatmeal chocolate chip over here. Have you ever had Pot Belly’s oatmeal chocolate chip cookies? They are *drool face* amazing. These have been made in those oatmeal chocolate chip cookies’ image.

And you don’t need Fall as an excuse to make them. They taste great at any time of year.

Here’s my baking essentials:

Oatmeal Chocolate Chip Cookies

Prep Time 15 minutes minutes
Cook Time 10 minutes minutes
Servings 3 dozen

Ingredients

  • 2 sticks sticks softened unsalted butter
  • 1 c. brown sugar
  • 1 c. sugar
  • 2 eggs
  • 1 tsp. vanilla extract
  • 2 1/2 c. oats
  • 2 c. flour
  • 1 1/2 tsp. baking soda
  • 1 tsp. salt
  • 1 1/2 c. semi-sweet chocolate chips

Instructions

  • Preheat oven to 350.
  • Mix the softened butter, brown sugar, and sugar together.
  • Mix in one egg at a time. Then add in the vanilla. Set aside.
  • In another bowl combine flour, oats, baking soda, and salt.
  • Stir the wet ingredients and the dry ingredients together by hand. Do not use an electric mixer.
  • Add the chocolate chips.
  • Roll into about 1-1/2 inch balls and space about 2 inches apart on a parchment lined baking sheet.
  • Bake in batches at 350 for 10-12 minutes.
  • Take out just before they start to brown for a soft cookie. Cool on a wire rack.
